INGREDIENTS

  • Chia seeds: 50 g

  • Vegetable milk: 200 g

  • Peeled apples: 3

  • Orange: juice from 1

  • Erythritol (or other sweetener): 3 teaspoons

  • Brazil nuts (or other nuts): a small handful

  • Cinnamon: 1 level teaspoon

  • Nutmeg: ½ teaspoon

  • Cloves: 4-5

  • Star anise: 5-6

DIRECTIONS

  1. Pour the chia seeds and vegetable milk into a small bowl.
  2. Stir with a spoon to allow the seeds to soak in the liquid. Place in the refrigerator, covering with cling film and let sit overnight.
  3. The next morning, peel two apples and cut them into small cubes.
  4. Place the apple cubes in a saucepan with the sweetener, spices (cinnamon, nutmeg, star anise and cloves) and orange juice.
  5. Mix the ingredients and cook over low heat until the cubes become soft. It will take about ten minutes.
  6. Place 1/3 of the apple cubes in a blender and blend until smooth. Set the mixture aside.
  7. Now chop the Brazil nuts with a knife or in a mixer, giving them quick taps so as not to pulverize them to flour. Set the mixture aside.
  8. In two small bowls, make the chia puddings by alternating the chia seeds with the apple compote and the caramelized apple cubes.
  9. Sprinkle the chopped dried fruit on top of the pudding and serve cold.
