- Pour the chia seeds and vegetable milk into a small bowl.
- Stir with a spoon to allow the seeds to soak in the liquid. Place in the refrigerator, covering with cling film and let sit overnight.
- The next morning, peel two apples and cut them into small cubes.
- Place the apple cubes in a saucepan with the sweetener, spices (cinnamon, nutmeg, star anise and cloves) and orange juice.
- Mix the ingredients and cook over low heat until the cubes become soft. It will take about ten minutes.
- Place 1/3 of the apple cubes in a blender and blend until smooth. Set the mixture aside.
- Now chop the Brazil nuts with a knife or in a mixer, giving them quick taps so as not to pulverize them to flour. Set the mixture aside.
- In two small bowls, make the chia puddings by alternating the chia seeds with the apple compote and the caramelized apple cubes.
- Sprinkle the chopped dried fruit on top of the pudding and serve cold.
