INGREDIENTS

  • Soy milk: 180 g

  • Erythritol: 30 g

  • Dark chocolate: 30 g

  • Unsweetened cocoa: 12 g

  • Agar agar: 2 g

  • Fresh apricots: 1-2

  • Apricot jam: 4 generous Tablespoons

PROCEDIMENTO

  1. Place the soy milk into a saucepan.
  2. Add in the erythritol, sifted cocoa and agar agar to the milk. Mix with a whisk until there are no lumps.
  3. Place the saucepan over the heat and, when it becomes hot, add in the dark chocolate previously cut into large pieces.
  4. Stir continuously until the chocolate melts completely.
  5. Bring to a boil and cook for another 2 minutes, stirring constantly.
  6. Pour the mixture into two pudding molds and place in the refrigerator for at least 2 hours.
  7. After the cooling time has elapsed, place the pudding on two saucers and garnish with 2 tablespoons of apricot jam per saucer and fresh apricots cut into slices.
