PROCEDIMENTO
- Place the soy milk into a saucepan.
- Add in the erythritol, sifted cocoa and agar agar to the milk. Mix with a whisk until there are no lumps.
- Place the saucepan over the heat and, when it becomes hot, add in the dark chocolate previously cut into large pieces.
- Stir continuously until the chocolate melts completely.
- Bring to a boil and cook for another 2 minutes, stirring constantly.
- Pour the mixture into two pudding molds and place in the refrigerator for at least 2 hours.
- After the cooling time has elapsed, place the pudding on two saucers and garnish with 2 tablespoons of apricot jam per saucer and fresh apricots cut into slices.
