DESCRIPTION

This recipe is really super simple! It makes for an excellent, simple alternative to a tart, because you don’t need to roll out the pastry, just crumble it into the pan. The sweet and velvety taste of pears and the unmistakable, spicy flavor of cinnamon will fill the entire kitchen and delight you with every slice, either for breakfast or as a snack!

INGREDIENTS FOR 6 SERVINGS

  • Spelt flour: 300 g
  • Almond flour: 90 g
  • Raw cane sugar: 115 g (including 30 g to put in the fruit)
  • Organic lemons: 2 for zest and juice (including one on the fruit)
  • Vegetable butter: 130 g
  • Sugar-free vegetable drink: 60 ml
  • Pears: 500 g
  • Cinnamon: one level teaspoon + a sprinkle
  • Salt

PROCEDURE

  1. Grate the peel of the two previously washed and dried organic lemons and squeeze the juice.
  2. In a large bowl, combine the flours, sugar, cream of tartar, fine salt, and cinnamon. Mix the ingredients together and add the vegetable drink, vegetable butter and the grated peel of one of the two lemons.
  3. The dough should be crumbly. Allow to rest for an hour in the refrigerator inside the bowl covered with cling film.
  4. Meanwhile, wash and cut the pears into small chunks. Transfer them inside a bowl and add the lemon juice, the zest of the second lemon, raw brown sugar and a sprinkling of cinnamon. Mix the ingredients together well.
  5. After one hour, preheat the oven to 180 °C fan assisted. Line a round, hinged baking pan about 20-22 cm in diameter with baking paper.
  6. Retrieve the dough from the refrigerator and crumble half of it inside the baking dish, making sure to cover the edges well by pressing lightly with your fingers.
  7. Now transfer the pears inside the baking dish, spreading them over the entire surface evenly, and crumble the other part of the dough over the surface.
  8. Bake for 25-30 minutes, until the pastry is slightly browned
  9. Serve hot or warm in slices.
